FRUCTOSE – FRUIT SUGAR
Fructose, or fruit sugar, is a simple sugar, called a monosaccharide. It is found in many types of food (honey, fruits, and some vegetables). Together with glucose and galactose, fructose is one of the three most important monosaccharides in our diet. Fructose is sweeter than common sugar (sucrose) and more soluble than other sugars. It bonds faster and is better at holding moisture than sucrose, dextrose and other sugars and sweeteners. This gives it a longer shelf-life and gives food a better texture.
